Enabling AHCI could really make Windows unbootable. I wouldn’t recommend it.

Interesting you didn’t even list the most likely cause of the error: bad HDD or SDD. If you have tons of time to mess with all these steps that may not work, go for it. I’ve found after hours of troubleshooting, if it’s not a bad update, it’s a bad HDD.
